I have just installed the latest pyglet version forcing the version (`pip install pyglet==1.5.15`). As @Tim says, you get a dependency warning (ERROR: pip's dependency resolver does not currently take into account all the packages that are installed. This behaviour is the source of the following dependency conflicts.
gym 0.18.0 requires pyglet<=1.5.0,>=1.4.0, but you have pyglet 1.5.15 which is incompatible.), but I successfully got Open AI gym environment rendering working on a Mac running macOS Big Sur 11.2.3.
